Healthy Banana Bread

This recipe has been tried and tested many times and I am just obsessed. The most updated version that I am about to share with you now is the best by far. It is gluten free, dairy free, refined sugar free and everything healthy. It also tastes even better than conventional banana bread. If I do say so myself, it is the yummiest banana bread I have ever tasted. Give it a go yourself and let me know how you get on! This will be the perfect addition to a Christmas Day dessert or brunch. I know I will definitely be making it a lot over Christmas. It is so easy and requires very few ingredients

You will need:

  • 2 cups oat flour

  • 1 cup coconut flour or desiccated coconut

  • 100ml oat milk

  • 1 egg

  • 2 bananas

  • 5 tsp coconut sugar

  • dash of vanilla essence

  • 1 tsp baking soda

  • 1 serving vanilla protein powder

  • 2 tbsp honey

  • 1 tbsp peanut butter

  • a dash of cinnamon and ground ginger to taste (optional but makes it more festive)

Method:

Mix together all the dry ingredients and wet ingredients separately. Combine the mixtures together and transfer into a cake tin or cupcake tin.

Bake on 200 degrees for 25-30 mins. Keep checking on the mixture as ovens vary.

Let cool for 10/15 mins before serving and enjoy!
